Happy Sunday! Look at the cute little tomato plants in our AeroGarden after a week!
They’re sprouting a couple of days ahead of schedule.
And watermelon is showing up in grocery stores here at reasonable prices finally which makes Miko and I very happy!
I took both pups for a long walk yesterday to visit the grazing sheep in the area who weren’t feeling very social.
But the walk did Leela in!
She had to crash under the coffee table for a bit to cool off, then passed out in her bed for a couple of hours to rest. I need to remember she’s not a young puppy anymore!
Last night I used Explore Asian’s Soybean Spaghetti and sweet and savory Lee Kum Kee Vegetarian Stir Fry Sauce for a simple dinner stir fried with an organic bag of frozen veggies.
It was fun, hearty, and loaded with protein and hubby drowned his in Sriracha!
There have been a lot of simple one pot meals in a wok this week like this curry sweet potato and tofu dish topped with Daiya Mozzarella Shreds.
And plenty of salad too like this chickpea and cultured veggie salad with Avocado Ginger Dressing.
Simple miso soup with tofu, asparagus, and cauliflower.
Spicy tofu soup with green beans.
Simple salad with hummus dressing – basically a big spoonful of hummus stirred with lemon juice, tamari, and seasonings of choice.
We also stepped out for spicy Thai tofu veggie stir fry Friday night with loads of color and veggies.
It’s been an interesting and draining week at work, so I’m looking forward to a decompressing trail run here shortly in the perfect sunny weather. I must enjoy that since we’re supposed to get more rain next week, woohoo! Oh, and lots of laundry and yard work today – boo. But first the list!

Tasty eats! I’ve been loving my Explore Asian noodles. I had them twice last week. :)
I totally agree with self care. We’ve been talking about whole body wellness in my nutrition classes. If stress or some other part of you is off, you could eat the best things in the world and still feel sick.

So true, I get wrapped up in tasks and find it hard to relax when so much needs to get done and it seems like everyone is getting busier and busier taking on more and taking time from taking care of themselves.

I hope Tyrann Mathieu stays vegan! I know it is really hard for people who travel a lot for athletics to stay vegan (if you think about it most vegan athletes are usually individuals with more obscure sports, not many team players who travel around during the season)
And I am excited about that frozen pizza! I don’t eat them often but they are good to have for days where you don’t want to cook and don’t want leftovers.

I could easily eat a whole watermelon too! Good thing they’re good for us and one of the highest protein fruits! :-) Me too on our garden, we’re growing potatoes for the first time this year – so fun!
