Sushi and Life for the Weekend List

Whew, it is nice to sit down a minute! I did another half marathon this morning and it was much more hilly with the first 5 miles climbing a steep hill. I will be posting that race story soon after I go through all the pics. But first other stuff from the week! It started raining Friday afternoon and rained all day yesterday. Not complaining, we need it! Smokey decided to make it a couch day.

Miko made it a lazy day too because he wanted nothing to do with the wind.

But he did stalk me around the house with his teddy bear wanting to play by the evening.

Friday night we headed to a local sushi place for dinner which is becoming my favorite place to go even though they don’t have any vegan rolls on the menu. They do have very talented sushi chefs that can make amazing and unique vegan rolls by request and I love that we get different surprises each time we go. Lots of fresh greens and tempura veggies in these rolls, so pretty and colorful.

But this fried roll with jalapeno slices was a fun and awesome creation too!

Yesterday hubby replanted the AeroGarden since the kale and herbs have run their course after a couple of months. Check out the crazy root system that thrived under the plants in the water!

Now we’ve got tomatoes and spicy peppers in it that should start sprouting in 7 days or so.

Eats have been pretty simple this week gearing up for the race, I made this fast and delicious miso garlic soup with Explore Asian Soybean Spaghetti for hubby and I one night and the leftovers were great for a simple lunch the next day.

This hearty curried lentils and potatoes another night.

Simple ginger garlic stew with Tofurky sausage and veggies.

And a hearty pre-race dinner of spicy curry quinoa and lentils with sweet potatoes, asparagus, and carrots.

In the man food department, hubby made this awesome marinara wrap with Gardein Meatless Meatballs and Daiya Mozzarella Style Shreds.

It’s been a good week and I am looking forward to Netflix and chilling tonight with a glass of wine! But first the list!

    Congrats on another half finished! You deserve a rest!

    I’m always so jealous of your sushi. Places by me will make veggie rolls but it’s the same old thing, avocado and cucumber and if I’m lucky they may throw in 1 other veg.

    Great links! I love the Instagram accounts and that vegan Men’s Journal article. I’m glad people are now talking about how you can go veg and still be a great, strong athlete. People should look at you too – 3 half marathons in a month proves how women can be great athletes on a plant-based diet. :)

      Thanks! Think I will take a break from longer races for a bit now. :-)

      We have some local sushi places too that just make standard cucumber and avocado rolls, not exciting and not great for off-menu ordering.

      Haha, thanks! I know a lot of veg runners that log even more miles, a guy on our team veg running team ran the last half in 1:12 and regularly comes in first places on races. Not sure if I’ll ever be that fast!

    Before I forget, in love with your Aero Garden!! Too cute. So much tasty looking food here but I think I’m most enamored with the spicy curry. Looks so good! And you need that energy for all the running you do. Cutest cat picture ever. Gray cats are awesome.

      Thanks, it’s fun having fresh growing veggies in the kitchen and can’t wait to see how many tomatoes we get!

      Lol, true on running! I’m throttling back the long races for the hotter months now.

      Aren’t they, like a cool science project in our kitchen! :-)

      Thanks and that’s three half marathons in the last month. Crazy, I know. But spring is a good time in this area do many half marathons for the training of one. I’m registered for a whole marathon in December and mildly freaking out too even though I’ll be training with my sister – it’s a huge step! I keep reminding myself there’s no time goal or pressure for the first whole, just trying the experience to see if I want to continue doing them.

    Mmm, I’m always in the mood for sushi! It’s just a shame that so few places are willing to get creative with their rolls, sticking with the same set of boring vegetable options no matter what the rest of the menu looks like. Seems like you’ve found a real winner right here; fried and spicy is a recipe for success!

      So true, so many veggie rolls are bland menu afterthought that rarely gets attention. And jalapeno slices are amazing on sushi rolls, yum!
