Leela was having a case of the Mondays yesterday and perfectly happy to hide in her bed.
Can’t blame her, it was tempting when my alarm went off. Smokey stayed parked on her favorite couch blanket all day.
Not a bad way to spend Monday for sure! I spent some of it getting creative with ginger because I have a large box of it to use up thanks to a trip to Costco! Did you know cacao powder, peanut powder, Garden Of Life’s RAW Chocolate protein powder, and frozen bananas blended with a large chunk of raw ginger actually makes a good smoothie? I was feeling daring this morning and it worked out well. And so did this tangy and creamy ginger avocado dressing. Blending it with fresh rosemary, curry powder, and garlic was a little scary, but ended up being a great flavor combo with a silky smooth texture.
Ginger Herb Dressing
- 1” thick chunk of fresh ginger
- 1 avocado, seeded and scooped
- 1 tsp. onion powder
- 2 tbsp. apple cider vinegar
- 1 sprig fresh rosemary
- 1 tsp. curry powder
- 1 small clove of garlic
- ½ cup water
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.
The thick and creamy dressing perfectly coated a huge kale salad with tangy and bright rosemary herb flavor.
And worked well with the sweet chopped apple added to the salad for a playful blend.
And every salad is great topped with nutritional yeast, right?

I’m with Leela, I didn’t want to get out of bed any day this week. I think it’s the weather change here in NJ. It’s much cooler this week.
I’ve always been a bit scared of ginger after I used it in a juice once and it burned and then I got sick – though I think I used way too much. I’m starting on my fresh ginger kick again using it in many of my sauces and dressings for the past few weeks. I’ll have to try it in my next smoothie if you say it’s good. :) The dressing looks great as well. You always make such tasty dressings.
True, so tough to get up early on really cold days!
Ginger can be strong and I’ve used too much of it before in recipes which can be awful, lol! But a little adds a nice kicky flavor and works really well with Rosemary in this dressing.
Fresh ginger is the best! I love it in my smoothies and it sounds perfect for this salad dressing.
