Poor Leela has been a little lonely and clingy this week.
She’s on antibiotics before a teeth cleaning appointment and not liking the side effects. I’m not liking having to sneak shove a dropper full of medicine into her mouth twice a day!
Miko is not liking feeling left out of the medicine party even after I explained that was a good thing.
And he didn’t like me not sharing this salad with him. Avocados are amazing for humans, but not so much for dogs. I have a stash of ripe avocados in the fridge to use up after my Grocery Outlet haul last weekend which is all good since they make great creamy salad dressings. This dressing has a fiery peppery kick that will bring a salad to life. And also a simple ingredient list and creamy, decadent texture.
Avocado Peppercorn Dressing
- 1 medium avocado, seeded and scooped
- 2 tbsp. nutritional yeast
- 2 tbsp. apple cider vinegar
- 2 tsp. peppercorns
- 1 clove of garlic
- ½ cup water as needed
- salt to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 servings.
