Are you ready for Thanksgiving? We’re getting there and learned recently that my dad will be staying with us for a few days, so we’ve been busily turning the gym room into a makeshift guest room with an Aerobed and cleaning. Smokey didn’t want to give up her favorite blue comforter for our guest.
Leela would never share her fuzzy fireplace blanket.
Miko would share anything, except maybe dinner.
No, he’d probably share that too and has when Leela sneaks a few nibbles from his bowl. You’re gonna want to share this healthy and kicky carrot-based ginger sauce with someone you care about, it’s loaded with ginger, garlic, and carrots with a fun flare from sriracha. Also simple and healthy which is perfect before or after a holiday loaded with time-consuming and not-so-healthy recipes, right? This could either be a raw vegan salad dressing or kicky sauce added to an oil free stir fry.
Kicky Ginger Sauce
- 1” thick chunk of fresh ginger
- 1 large or 2 small carrots, chopped
- 1 clove of garlic
- dash of sriracha (optional)
- 2 tbsp. tamari (soy sauce)
- 1/2 cup of water, as needed
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2 servings and can be used as a sauce or salad dressing.
I added it to a tofu oil free stir fry with onions, broccoli, and more carrots.
For a simple and colorful one-pot meal.
The sauce has a bright ginger flavor with a little bit of heat and garlic kick which the tofu absorbed nicely.
Keep it simple and healthy with this sauce to combat holiday stress!

I never feel fully prepared for Thanksgiving, even after the event is over! It’s my first year being away from home though, so it’s an especially off-kilter experience right now. Anyhow, I’m still very thankful for all the inspiring recipes and kind bloggers like yourself, so I wanted to wish you a very Happy Thanksgiving! :)

So true on Thanksgiving, there is always relief when all the chaos is over. Hope it was a wonderful Thanksgiving for you!

That dish looks incredible!
Funny Chi story in our house is that Paco what we call ‘the patient one’ (most of the time) because he lets everyone go first to get a drink of water…he will wait in line…and drink last…silly Chihuahuas!
