Spicy Ginger Peanut Dressing

Good news, Friday is almost here! And it actually got a little cool here and rained this week! Not a lot, this is California, but it was something. And I had to giggle at all the women at work wearing high boots because it actually got down to the 70s. It’s still too hot for tall boots for me and it’s not even October yet! Getting a little evening rain meant play time inside for Miko which was just fine with him.

He could play fetch and tug-o-war for hours while we’re watching TV.

It does not get old for him.

Hemp seeds do not get old for me, I never get tired of throwing them into blender sauces and smoothies.

I go through this 5 lb. bag from Nutiva about every 3 months, thank goodness for Amazon Subscribe and Save. And that these little superfood miracles go so well in creamy ginger dressings like this simple and kicky miso dressing.

Spicy Ginger Peanut Dressing

  • 2 carrots, chopped
  • 3 tbsp. miso paste
  • 1″ thick chunk of fresh ginger
  • 1/4 cup apple cider vinegar
  • 1/4 cup hemp seeds
  • 1 tbsp. peanut butter
  • 1 tsp. sriracha (or to taste)
  • 1/4 cup water

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 servings.

I added edamame to this loaded romaine salad to make it a hearty meal and beautiful colorful creation.

And enjoyed a hearty dinner with a little light reading.

The dressing has a traditional Asian ginger flare with a creamier texture and more kick thanks to the Sriracha.

    I’ll have to look into that version of Hempseed. Ha, about those boots! Here in Buffalo, you’d better own at least 10 pairs, not kidding. Cute doggie pics as always. And any dressing with Peanut Butter wins my heart….every time. Love that stuff!

      I’ll bet in Buffalo and we can live in boots here too when we actually get rainy seasons. Thanks on the dogs and try this dressing, great for a fresh salad.

    OMG OMG OMG!! I must have this! For the past week I have been detoxing on a raw foods diet, drinking lots of water and chilling in the sauna… and I’ve lost 7 pounds in a week. It’s crazy, because I feel awesome and I swear my skin is looking amazing! So now I’m on the prowl for raw food recipes!!!
