Thursdays can be tough during a busy week sometimes feeling like I just need to make it to Friday, especially before a 3 day weekend – woohoo! It’s not tough for Smokey, everyday is a weekend day for her basking in the sunshine or snuggling in her favorite couch blanket all day.
The chihuahuas find busy weeks tough too because they want more attention from us. But they try to help out keeping the floors free of food.
I know I do a lot of salad dressings lately. But a huge, colorful salad is my go to during a busy week. That consistent reminder that I’m still making good food decisions when things get a little chaotic. It’s a comfort heath food that can easily be a satisfying meal with unlimited flavor possibilities that can be served in a huge pasta bowl. Salads are my fast food because I can ninja one together in minutes after perfecting my veggie chopping skills over the years. Much faster than waiting through the Taco Bell drive thru line … from what I’ve seen driving by after work, yikes!
Here’s a simple avocado salad dressing that packs a tangy Dijon zing and a silky smooth texture. It has a short ingredient list that comes together quick in a blender and works with a variety of salad ingredients.
Simple Tangy Avocado Dressing
- 1 avocado, seeded and scooped
- 2 tsp. dried parsley
- 1 tbsp. miso paste
- 2 tbsp. lemon juice
- 1 tbsp. Dijon dressing
- 1/2 cup water, as needed
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 2-4 servings.
Ah, such a comforting, vibrant green color.
That completes a brightly beautiful salad.
Topping the salad with a little smokey seasoning flare didn’t hurt since that’s my latest seasoning addiction.
And the second serving of this salad made a great simple lunch today, the lemon juice blended with the avocado helps preserve the color and flavor in the fridge for a couple of days for easy healthy eating.

I think that dressings are underrated! I love seeing all of the ones you come up with! I have been watching TannyRaw on YouTube and she makes a lot of sense. I think dips, spreads, and dressings can make or break this lifestyle. The more the merrier! PLUS it’s just another way to include more fruit/nuts/seeds/veggies in what we eat!
