We’re still here struggling to stay cool, it was 108 degrees when I left work for the gym today! And even worse tomorrow, yuck! Miko has been a little tired of being stuck inside.
And I’m trying to channel fall and cooler temps with this simple and light salad dressing. It’s sweet, has a warming cinnamon flavor that works perfectly with chopped apple. But is still cooling and refreshing for unexpected and insanely hot weather.
Cinnamon Fall Dressing
- 1 banana, peeled and chopped
- 2 tbsp. apple cider vinegar
- 2 tbsp. lemon juice
- 1 tsp. cinnamon
- 1/2 cup water, as needed
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.
The texture is creamy, but lighter and airier compared to a nut or seed based dressing.
And worked great with pumpkin seeds for a heartier salad.
The flavor is slightly sweet, savory, and tangy.
Of course I had to share our chilled watermelon dessert.

Oh my, even I think that’s too hot. It’s only in the 60s in Chicago today and for the weekend. I guess I won’t complain.
That cinnamon dressing sounds delicious. I’m going to try it with a spinach and apple salad.

The heat is insane here today and it’s smokey from wild fires, ugh! Luckily it starts cooling off this weekend and we’ll be in the 80s soon.
Thanks on the dressing, it’s nicely simple for a week day salad.

I thought I commented on this one but didn’t sorry about that! I know one of my goals int he next few weeks is to make more sauces, drips, dressings, and seed based cheeses out of pumpkin seeds and sunflower seeds a bit more than my nuts I usually use :) Mini goals…ya know…thanks for the reminder!
