Friday is almost here, whew! We’ve been busy with work and home projects here lately and Miko gets frustrated when hubby isn’t paying enough attention to him.
He climbs around his lap and does cute little stretching tail-wagging antics to get his attention.
And I’m back at it with large meal salads in our hotter temps, but wanted something a little more creamy, comforting, and kicky. And healthy, of course. This creamy dressing has a smokey cheddar flavor and gets it’s creamy texture from chia seeds and nutritional yeast while being oil and sugar free.
Smokey Cheddar Dressing
- 2 tbsp. chia seeds
- 1 red, orange, or yellow bell pepper, rough chopped
- 1 tbsp. apple cider vinegar
- 2 tbsp. nutritional yeast
- 1 clove of garlic
- 1 tbsp. miso paste
- 1/4 tsp. turmeric
- 1/4 cup of water
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.
The dressing even looks like a creamy cheddar sauce.
And wonderful topped with a little more nutritional yeast and smokey seasonings.
The flavor is very comforting with a gooey, slightly tangy, and savory smokiness and texture perfect for coating.

What an awesome idea! Vegans sure do love faux-cheesy flavors, right? ;) I love the fact that this is sort of like a two-in-one recipe, since it will eliminate the need for any additional cheesy chunks/crunchies to make an awesome salad.
