We’ve been enjoying that it hasn’t been as hot here with temps in the 80s and low 90s, Miko loves a little toy throwing time in the backyard.
And I noticed our basil plant is going nuts, thriving in the crazy heat.
Expect a lot of basil recipes from me over the next few weeks! This creamy balsamic dressing recipe came out beautifully even if the color is a little, uh, interesting. It’s kicky with a rich and savory basil flavor accented nicely with balsamic. And oil and sugar free, of course.
Balsamic Basil Dressing
- 1 cup fresh basil leaves
- 1/2 cup shelled hemp seeds
- 3 tbsp. balsamic vinegar
- 2 tsp. onion powder
- 1/2 cup water, as needed
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 servings.
The color is an interesting green-ish thanks to blending in balsamic, but the flavor makes up for it and it has a thick and creamy texture that works over light greens or a hearty meal salad.
It adds a fresh and vibrant basil fragrance and a strong, but not overpowering balsamic tang.
A simple dressing or dip to throw together with a tangy and bright summer flavor.

It’s funny that you mentioned the basil, because I’ve noticed our basil plants (okay, total overkill, I put in 24 plants!) are thriving this year. But no, we do not have your 90, holy cow, degree weather. We are lucky here to hit 80 degrees at all. You have so many good ideas for dressings. I’m helping with the food, yikes at my sisters wedding in 2 months and this dressing would be awesome for a dip. How about a veggie tray station? Yum.

I’m happy it’s cooling off in Cali. That heat wave was intense! Chicago is having the opposite weather, if feels like October. We’re supposed to have some 90 degree days this weekend, and I can’t wait!

Me too! Back to triple digits today and tomorrow, but in the 90s again for the rest of the week which is better! The weather has been so odd everywhere lately, hope you enjoy your warmer weather!

I’m so jealous of your amazingly prolific basil plants! Mine barely have any leaves on them, so I’ll probably have to hit up the farmers market to make your awesome dressing. I would eat pretty much anything with those fresh flavors on top.
