Simple Sweet Dressing

Leela is still not happy about the triple digit heat here, she kind of wanders around the house restless and seems a little more on edge being stuck inside.

But it’s too dangerous to take them for long walks during the worst of the heat. Miko agrees, he’s still fine with chilling inside.

I’m fine with cooling, simple salads after a day of working and running around in the heat. The last thing that appeals to me is a hot dish when all I want is cool watermelon and frozen grapes! This dressing is very simple and cooling with a sweet dilly Dijon kick and light creamy texture.

Simple Sweet Dressing

  • 1 banana, peeled and chopped
  • 2 tbsp. lemon juice
  • 1 tsp. dill
  • 1 tsp. onion powder
  • 1 tsp. Dijon mustard
  • 1/4 cup water, as needed

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.

Why use fatty oils, dairy, or sugars when a banana adds the perfect creamy sweetness to a salad dressing?

The texture is is a little lighter, not as thick as a nut or seed based dressing, and great for a lighter summer salad.

And coats it practically transparent to let the vibrant colors of the veggies shine.

Topped with a simple splash of salt and pepper and it was a great meal salad with tangy flavor depth while being cooling.

    Poor pups! I probably should stop complaining about the chilly summer Chicago is having.

    That salad looks great. I really need to try using bananas for salad dressing.

      Yeah, ugh on the heat here! But it’s not as bad as it could be since it’s not humid here. Leela seems to over heat quick on walks since she’s so small.

      Thanks on the salad, bananas are a great creamy and sweet sauce base.

    I must admit, I’ve never seen bananas being used as a dressing base before- How clever! I’m very curious about the sweet and savory balance going on here.

      Banana is great for a creamy sauce adding a light and sweet whipped creamy texture.

    we finally had a break in the heat here in VA today – but the trade off is crazy rain! The dressing looks amazing – I’m always looking for new flavors to umph up salads.
