Salads Can Be Gooey and Cheesy

Miko is a little bored with me this week.

I’m still feeling washed out with this cold, but it’s almost gone! Thank goodness, I’m ready after 5 days of it! Colds can cause some interesting food cravings for me, anything salty, fatty, and/or sweet which are bad options for energy crashes and feeling even more sluggish! I was craving something a little salty and hearty for dinner last night and created a simple, oil-free tofu stir fry. I’m leery of tofu since so much of the cheap stuff is GMO soy, but Costco has a 4-pack of these House Foods Organic Non-GMO Tofu packages for under $6.

And even our local Target has San-J Reduced Sodium Organic Tamari now, life is good!

Not that long ago it was only available at Whole Foods, things keep getting better for health nuts!

I sauteed chopped onion in about an inch of water over high heat in a wok and stirred in the chopped tofu, summer squash, minced garlic, and a drizzle of tamari.

Maybe the end result wasn’t entirely beautiful, but a very simple and fast whole foods one-pot meal after a draining and busy work day that hit the spot.

I’ve also been getting creative with hearty salads in dealing with my wacky cold cravings and spicy, cheesy dressings are a great cold comfort food too! This one is hemp seed based with rosemary, turmeric, and cayenne for a powerful and kicky flavor blended with a smooth, cheesy texture.

Kicky Cheesy Hemp Dressing

  • 1 cup shelled hemp seeds (or hemp hearts)
  • 2 tsp. dried rosemary
  • 2 tbsp. apple cider vinegar
  • 3 tbsp. nutritional yeast
  • 1/2 tsp. onion powder
  • dash of cayenne
  • dash of turmeric
  • 1/2 cup water
  • salt and pepper to taste

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 4 servings.

The texture is very thick and gooey, perfect.

It coated a simple salad of power greens, chopped bell pepper, tomato, and chopped apple for a fun sweet and spicy twist.

It was wonderful – gooey, cheesy, hearty, sweet, savory, and a little spicy.

    I’m so intrigued by your cheesy hemp dressing, my husband was just telling me we need to try harder to eat healthier spins on salad dressing. Salads can be so creative! Thanks for this inspiration. Too bad about your cold, they bring out strange cravings in me too.

      Very true on salads, the flavor possibilities seem endless and it’s so fun getting creative with blender dressings. Thanks on the cold, almost completely gone thankfully! I can’t remember the last time I’ve had one that hung around this long!

    Excellent! The sauce sounds terrific and the photos are wonderful! I’ve been thinking about getting a 2nd blender…have been thinking about another vitamix – not sure which model to go with – might be emailing you in the near future :)

      Interesting on a 2nd blender, what will you be using it for? Consider getting another container for the Vitamix too, that’s really helpful for preparing multiple recipes at a time.

        I’m afraid I’m getting too rough on my Vitamix and don’t know if I remembered to register it when I got it! Not sure if the warranty is in their system! My Bad! Eeeek! I had thought about a 2nd container, tho, but might have to grab a whole 2nd blender…eeeeeeek!
