We finally got a little bit of rain here this week. No where near enough to make a dent in the scary drought conditions, but enough to make the dogs protest going outside to do their business.
Miko is so funny when he thinks it’s too cold and wet outside, he curls his tail and butt in, crouches, and pouts. Yet he does not like wearing doggy clothes to keep warm.
This salad warmed me up with a rich and creamy avocado dressing packing a warming kick. I adapted this recipe from another version loaded with buttermilk, cream, and other ingredients that seriously negate the health benefits of a salad. I used avocado instead with dried cilantro, cumin, and a playful cayenne kick.
Cilantro Avocado Dressing
- 1 avocado, seeded and scooped
- 2 tbsp. lemon juice
- 1/2 tsp. onion powder
- 2 tsp. dried cilantro
- 1/4 tsp cumin
- dash of cayenne
- 1/4 cup water, as needed
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.
Feel good about coating a hearty salad in this creamy dressing!
And I topped with nutritional yeast for more protein and cheesy flavor, yum.
