Poor Leela is still having sinus issues. We learned at her last vet appointment that she’s still battling a sinus infection and possibly allergies which have been really bad for pets this year too with the drought. She’s hanging in there and happy to hang around the dinner table reminding us we could be sharing.
But I couldn’t share this salad with her, no avocado for dogs. So more for me! This is a delicious variation of ranch dressing without all the cream, oil, mayo, etc. Just simply avocado for the creamy texture with the tangy, savory herb flavor ranch dressing does so well.
Better Ranch Dressing
- 1 avocado, seeded and scooped
- 2 tbsp. apple cider vinegar
- 1 clove of garlic
- 1 tsp. dried dill
- 1/2 tsp. dried parsley
- 1/2 tsp. onion powder
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 cup water
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.
The dressing is a vibrant and cheery green with visible herbs.
And very thick and creamy, a great thing for crunchy kale salads.
And it has a very ranch-like flavor and texture with a much better ingredient list.
