It’s been a week with a lot of stress at work and me cranky while battling a cold, I’m ready for it to end and had to remind myself to breathe and be grateful a few times! Miko seems to know I’m a little out of sorts and has been extra clingy and cuddly.
And hubby sweetly grabbed dinner from Baagan last night after I had a minor freak out the night before after making dinner and cleaning up multiple messes. He grabbed the Prana Bowl for me, a spicy party of rice, avocado, veggies, and cashew cream in an Indian tomato broth.
And a huge kale salad for himself.
Tonight I was back to it with a huge salad and an avocado to use up. But I was craving comfort food for sure, colds can be evil that way. I came up with a comforting cheesy and kicky dressing that blended avocado and carrots for the base of a nacho “cheese” dressing.
Avocado Nacho Dressing
- 1 avocado, seeded and scooped
- 1 carrot, chopped
- 1 small clove of garlic
- 2 tbsp. nutritional yeast
- 1/2 tsp. onion powder
- 1 tbsp. apple cider vinegar
- 2 tsp. tamari
- 1/2 tsp. cumin
- 1/8 tsp. turmeric
- dash of cayenne
- 1/3 cup water
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.
The texture is very thick and gooey and could be a great nacho dip too.
I coated a kale and Brussels sprouts salad in it.
For a crunchy and comforting work-of-art salad.
It hit the spot, appeased my desire for a comforting splurge while still being healthy. Great dressing for colds! Now I think I will further treat my cold with a glass of wine.

Boo to colds and going to work. I hope you’re feeling better. I always feel that spicy food helps clear my sinuses. This dressing must have made you feel a little better. :)

Thanks on the cold, starting to feel better and hopefully much better by the weekend. So true on spicy foods, hmmmm maybe spicy Thai tofu tonight. :-)
