I agree! Time to start thinking about using vacation time! He did enjoy the little bits of carrot I fed him while making this dressing because can you ever really get tired of tahini and ginger? This variation adds cilantro to the party and has a silky, creamy texture with a wonderful savory herb warmth and slight playful kick.
Creamy Ginger Carrot Dressing
- 1/4 cup tahini
- 1 carrot, chopped
- 1″ thick chunk of fresh ginger
- 2 tbsp. tamari
- 1 tsp. dried cilantro
- dash of cayenne
- 1/4 cup water
Place all ingredients into a blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 2-4 servings.

Thanks and I never peel ginger, not worried about the organic stuff and the skin does not seem to affect the flavor in blended recipes.
