Thank goodness Friday is almost here, I am ready for this week to end. So is Miko, he’s been pouting for more play time and not happy at us for coming home tired and cranky. I can’t blame him!
Smokey is still ready for more attention and to steal Miko’s camera time.
I’m ready to try more mushrooms. I had mushrooms to use up in the fridge which is always a fun challenge to create a raw recipe with mushrooms that I like since I’ve always had an iffy relationship with the texture and smell. This dressing is a hit with kicky herbs and garlic for a better cream-of-mushroom soup flavor with more punch.
Mushroom Avocado Dressing
- 1/2 cup chopped mushrooms
- 1 avocado, seeded and scooped
- 2 cloves of garlic
- 2 tsp. onion powder
- 2 tbsp. lemon juice
- 1/2 tsp. thyme
- 1 tbsp. miso paste
- 1/2 tsp. peppercorns
- 1/2 cup of water
Place all ingredients into a high speed blender and blend to a smooth texture. Serve and enjoy! Makes 4 servings.
Yeah, it kind of has a condensed cream of mushroom soup look too.
The creamy texture coated a large spinach salad with steamed lentils turning it into a hearty meal salad nicely.
This dressing has a stronger flavor with tangy garlic and savory, smooth mushroom, great for fans hearty dressings.
And great for those with so-so appreciation for mushrooms looking for new ways to enjoy these nutritional powerhouses.
