Tuesdays aren’t my favorite day of the week. It’s still far from Friday and typically really busy at work and at the gym. It’s a long day that starts early in the morning when I drop the chihuahuas off at their daycare, or my mom’s house, before work and head to a busy gym right after work. But coming home and relaxing with hubby and playing with this little guy is a nice reward for getting through it.
Of course Leela and Smokey are welcome faces to see after a long day too! Poor Leela is still a little cranky and snuffly getting over her sinus infection.
And not happy about taking pills twice a day for it! Thankfully Tofurky slices make that process much easier for both of us.
Simple salads are great after busy days and I had a little fun with this dressing recipe for a simple kale and lentil meal salad. I originally wanted to call it vegan pizza dressing since I tried to incorporate all the wonderful flavors in a fresh pizza, but really it’s a creamy basil dressing with a crisp garlic kick that still came out great.
Creamy Basil Dressing
- 3 medium roma tomatoes, chopped
- 1/4 cup fresh basil leaves
- 1/2 cup shelled hemp seeds
- 2 cloves of garlic
- 2 tbsp. nutritional yeast
- 1 tsp. onion powder
- 1 tbsp. apple cider vinegar
- 1/4 cup water, as needed
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 servings.
The texture is nicely creamy for coating raw greens.
And makes a pretty and vibrant looking salad.
I added some smokey red pepper flakes to make this salad more of a decadent and creamy celebration of super foods with pizza themed flavors. :-)

Yum, you can’t go wrong with basil and garlic. I wish it would warm up here so that a cold salad would satisfy me.
