Leela and Miko are still recovering and maybe not talking to me slightly after yesterday. We took them both to the vet for annual shots and nail clippings which I hate putting them through.
Leela is a little better about car rides and going to the vet after multiple teeth cleanings, but poor Miko pouted getting into the car and was terrified when we arrived at the vet.
He seems to be recovering after a few treats and was back in the kitchen tonight begging for more dinner. But we need to take him for more fun car rides now.
I had a little fun with dinner last night using a cup of Dr. McDougall’s Vegan Split Pea Soup with kale, quinoa, and lentils for a one pot meal.
This dried soup is a great pantry staple that isn’t too pricey on Amazon, especially using the Subscribe & Save option and good for a stand alone emergency meal at work or lazy meal at home because it has a lot of flavor for such a simple ingredient list and being low sodium.
But it’s also fun to use for adding flavor and texture to quinoa, rice, stews, etc.
I used it in this simple, one pot meal with quinoa and dried lentils and it came out delicious!
Split Pea Quinoa with Lentils and Kale
- 1 pack of Dr. McDougall’s Vegan Split Pea Soup
- 3/4 cup quinoa
- 1/4 cup lentils
- 2 cups chopped kale
- 1 tbsp. miso paste
- 2 tbsp. nutritional yeast
- 3 cups water
Bring water, quinoa, and lentils to a boil in a medium soup pot over high heat. Reduce heat to a simmer and stir in the rest of the ingredients. Cover and simmer for about 25 minutes stirring frequently. Serve and enjoy. Makes 2-4 servings.
I simmered until the loose liquid was absorbed.
And served it.
The texture of the quinoa is great with the heartier lentils blended in and the soup mix adds a creamy and savory split pea and garlicy flavor for a satisfying one pot meal.
