Thank goodness Friday is almost here, it’s been a week at work! Always nice to come home to a sweet hubby and Miko ready for couch cuddling.
Also nice to keep dinners simple, nutrient dense, and delicious. And this balsamic beet dressing recipe fits the bill being avocado and beet based and packing a tangy balsamic punch with such a lovely and cheery color!
Balsamic Beet Dressing
- 1 medium beet, rough chopped
- 1 medium avocado, seeded and scooped
- 1/4 cup balsamic vinegar
- 2 tsp. dried parsley
- 1 clove of garlic
- 1 tsp. onion powder
- 1/2 cup water, as needed
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 servings.
I just love adding beets to blender recipes for the vibrant color alone.
Avocado is the perfect texture to compliment the sometimes earthy texture of raw beet, this dressing is very thick, smooth, and creamy. And fabulous coating romaine salad topped with nutty hemp seeds.
The flavor is a creamy balsamic with a herb garlic flare and wonderful for turning a plain salad into a hearty and flavorful meal salad.
