Still recovering from the holidays and crazy times at work here, I’ve been on call over Christmas and the weekend and it’s been busy with end of the year stuff! Looking forward to a little relaxing next week with the New Year’s time off. Leela is still looking a little tweaked, I think the holiday stress hit her hard too.
She’s been a clingy this weekend while Miko has been thrilled to play with his new toys inside since it’s a little chilly outside.
And I’ve been catching up on end of year stuff at home, dropping off items for donation to make room for the new Christmas stuff, trading in video games hubby is done with, and grabbing a few essentials at Target. Feels good to get control, but I still have some de-cluttering and cleaning to do and feeling a little drained.
I pretty much love all nuts, but walnuts are one of my favorites. I could snack on them raw all day, but they’re also great to use as a base for creamy blender salad dressings.
This simple recipe pairs walnuts with a tangerine and a little kick from red pepper flakes.
Citrus Walnut Dressing
- 1/4 cup shelled walnuts
- 1 tangerine, peeled
- 1/4 tsp. red pepper flakes
- 1/2 tsp. salt
- 1/4 cup water
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 2-4 servings.
Simple ingredient list, right? But the dressing packs a nice kicky flavor with a creamy texture.
It has a comforting level of heat without being too spicy and adds a savory warmth to a winter salad.
