Today was one of those get-me-a-glass-of-wine-now days at work. I’ll spare you the details, but tackling big projects and growing pains is not fun mixed with the holidays and stressed out co-workers. But I think Leela is a little more stressed than me today. She’s been getting a little cranky when Miko or Smokey gets too close to her comfy fireplace bed.
She has her comfort zone and lets them know when it’s being invaded.
Can’t blame her, I have those days too. My comfort zone has been salads this week … well most weeks. But especially during the holidays to combat much of the rich eating with healthier eating at home. I threw together a simple butternut squash-based dressing in the Vitamix this week that got a thumbs up from hubby and that’s not easy for veggie-based dressings. This one is smokey, warming, and packs a nice garlic kick with a hearty and creamy texture. But still light not being loaded with oil or cream.
Butternut Tahini Dressing
- 1 cup chopped raw butternut squash chunks
- 1/4 cup tahini
- 2 tbsp. lemon juice
- 1/2 tsp. cumin
- 1/2 tsp. smoked paprika
- 1 clove or garlic
- 1/2 cup water as needed
- salt and pepper to taste
Place all ingredients into a blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 servings.
The color is a warm golden orange, perfect for winter.
And it was great on this simple spinach salad with tomatoes, black beans, carrots, cabbage, etc.

This salad dressing looks delicious Christine. My husband hates creamy dressing because he loathes ingredients that make them creamy, like mayo, sour cream, etc. I think he’d love this because he is a squash and garlic fan. I have a butternut squash sitting in my kitchen just waiting to be turned into this yummy dressing. Thanks for the inspiration.
