It’s actually getting chilly here with temps in the 30s and Smokey is not complaining since she gets to watch a lot of her favorite show.
Miko is though, he’s not a fan of cold or rain and gets a little pouty when he can’t have warm lap time.
We got a bunch of golden beets in our last farm box and I’ve been lacking on inspiration with them beyond throwing raw chunks into breakfast smoothies.
I need to buy more beets and get creative with them because they are nutritional powerhouses. Not the easiest to work with, but sometimes good things aren’t easy, right? Inspiration came when I got a shipment of tahini from Amazon this week. I love that stuff, I could eat it right from the jar. And it has the perfect silky and smooth texture to counter the earthy and sometimes gritty texture of raw beets. I added half of a medium beet to a basic tahini blender dressing and wow! It was creamy, smooth, tangy, and perfect with massaged kale.
Tahini Beet Dressing
- 1/4 cup tahini
- 1/2 medium raw beet, rough chopped
- 2 tbsp. apple cider vinegar
- 1 clove of garlic
- 1/4 cup of water
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Makes 2-4 servings.
You could use any variety of beets in this dressing, the golden ones added a warm color to it and red beets would be a fun party with neon pink dressing.
I coated a simple massaged kale salad with steamed broccoli for a huge meal plate.
And the creamy dressing added a savory, kicky, tangy garlic flavor that was perfect for for raw kale. It was not earthy at all and went well with the broccoli too.

Thanks! Roasting them can be time consuming and tricky! We just got more in the farm box that I need to figure out something to do with.

I really need to do more with beets! I tried a few things this year – including a raw ‘ravioli’ and I found that I don’t like raw beets as much as I do cooked…but juiced…that’s something else! :)
