Protein Dijon Dressing

Hey, Friday is almost here! I’m ready, it’s been an odd week of drama and stress. Thank goodness for great family to talk to, a wonderful husband, and intense workouts to blow off a little steam. And we’re still kicking it here with Shadow, he’s eating and drinking. But not gaining any weight, very skinny, and has a weeping eye now. His intestinal issues have flared up again creating some tough cleanups for hubby and I. But still has energy and seems to enjoy hanging out. Smokey is doing just fine.

It’s been a creative challenge keeping her from eating the extra bowls of food we’ve been putting out for Shadow.

With everything going on, I haven’t been making it to the market much this week and had an interesting and simple salad for dinner using what we have. I like keeping the plain flavor of Garden of Life’s Raw Protein powder around because it can be used in a variety of sweet and savory recipes to add a little protein boost.

And I used a scoop of it in a simple Dijon dressing to make a hearty meal salad.

Protein Dijon Dressing

  • 1 scoop of plain plant-based protein powder (I used Garden of Life’s Raw Protein)
  • 1 banana, peeled and chopped
  • 1/2 tsp. Dijon mustard
  • 2 tbsp. lemon juice
  • 1/4 cup water
  • salt and pepper to taste

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Makes 2 servings.

The dressing is very thick and creamy, almost looks like soft serve ice cream.

I coated a simple romaine salad with it, added leftover Daiya Cheddar shreds and vegan chili from our chili night for an interesting and tasty salad creation.

Okay, it’s interesting looking. But sometimes the best creations and inspiration comes from limited resources and in this case the creamy Dijon dressing worked well with the cheddar flavor and spicy chili.

    Neat dressing! Love that you used GoL’s Protein powder…might have to try this! I have some frozen bananas. How much does the banana flavor effect the overall flavor in the dressing or does it taste more like Dijon?

      Thanks and the banana flavor was very mild, it really added more of a slight creamy sweetness to the Dijon flavor.

    Sorry about the cleanup duties this week! I’ve been in your shoes, NOT fun!!

    This is an interesting combo, but I’ve loved all of your dressings so far, so I’ve got to believe that this is just as good. I love the idea of putting protein powder in it. I save mine for smoothies, but you’ve just convinced me to venture out a bit. Thank you!
