Broccoli Mash & Butternut Pudding

Lately I’ve been watching random shows and movies on Netflix during home workouts and I decided to watch Forks Over Knives last night. I’ve seen it before, but it’s been over two years and I decided I needed a refresher on all the information.

I’m glad I watched it again to rejuvenate healthier eating habits like staying away from refined oils, sugars, and carbs more. That means a lot less pan frying and stir fries for me, skipping bread and pasta more when eating out, and doing more steaming, pressure cooking, and soups when cooking foods at home. So last night I steamed chopped potatoes and broccoli together to make a mash and our stove top steamer steamed the the potatoes perfectly in about 25 minutes on high heat.

Hubby mashed the broccoli and potatoes together mixing in a little vegan sour cream.

And I added some salt, onion powder, pepper, garlic, and parsley to taste.

And we topped with a little melted Daiya Cheddar Shreds for a simple dinner.

That was actually delicious, the ratio was about 50/50 potatoes and broccoli, but it didn’t taste like there was that much broccoli, more like a slightly green potato mash. The dogs were happy to share just the leftover mashed potatoes and broccoli.

Tonight I got a little creative with a slightly sweet dessert-like dish with dinner using butternut squash, Garden of Life’s Raw Protein Powder, and a little cayenne. But I wasn’t sure what to call it, it’s pate or custard like, but isn’t because it has no milk or meat. So how about a pudding?

Butternut Pudding

  • 4 cups of chopped butternut squash (one medium squash, skinned, seeded, and chopped)
  • 1 scooped of plain protein powder
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 2 tbsp. maple syrup
  • 1/2 tsp. salt
  • dash of cayenne

Place all ingredients into a food processor and process to desired smoothness. Serve and enjoy. Makes 2 servings.

The texture looks more like canned pumpkin or pumpkin pie filling.

Maybe not the most appetizing looking, but very tasty.

It has a sweet flavor with a nice spicy kick from the cinnamon, nutmeg, and cayenne making for a playfully sweet and warming fall dish.

    I totally want to try this! I LOVE Folks Over Knives! It’s been about a year since I have seen it last. Might have to rewatch it as well! I recently borrowed one of the companion books from the library and I have already renewed it twice…might have to purchase it!
