Pepper Protein Dressing

Happy Saturday! It’s been a great weekend here so far starting with hubby and I hanging out with some fun work friends last night trying new beers at The Yard House and venting about work stress. This morning I ventured out on my final half marathon training run of 10 miles and have been feeling a little worn out from it happy to spend time relaxing and Shadow has been perfectly happy to chill out with me.

While Smokey gets a little pesky for more attention while I’m parked on the couch.

Hubby has been a house rock star today tackling many projects like sterilizing the coffee pot and even pulling out the oven to clean behind it! Such a sweetheart since I didn’t get to as many chores as I was hoping.

Skipper’s lovely day consisted of chilling in the back yard and snacking on carrots.

He loves crunching up whole carrots for snacks.

And I decided a huge, nutrient dense salad was in order for dinner after an exhausting run and created another protein dressing using hemp protein powder. This one has a thick texture with a tangy and slightly spicy pepper flavor.

Pepper Protein Dressing

  • 1/4 cup hemp protein powder
  • 1 red, orange, or yellow bell pepper, rough chopped
  • 1/2 tsp. salt
  • 1/4 tsp. turmeric
  • 1/2 tsp. curry powder
  • 1 tsp. tamari
  • 2 tbsp. lemon juice
  • 1 tbsp. flax seeds
  • 1 tbsp. tahini
  • 1/4 cup water

Place all ingredients into a high speed blender and blend into a smooth and creamy texture. Serve as a dressing or a dip. Makes 4 servings.

Hemp protein powder adds an interesting green color that’s not too appetizing. Thankfully it tastes much better than it looks.

I promise, it really does taste better.

The dressing has a thick, creamy, and hearty texture from the flax seeds and tahini. It’s savory with a slightly spicy curried pepper flavor that works well with kale leaves and raw broccoli.

It’s a great addition to a loaded nutrient powerhouse meal salad that I’ll call my recovery salad.

And watching my sexy hubby do the dishes after was a fabulous dessert.
