Raw Chili Sauce

Things are going better with Skipper, he’s actually gained nearly 2 lbs. which could be a result of the insulin shots for his canine diabetes. And his appetite isn’t so crazy, but he still loves treats.

And making a mess all over our floors with them.

The weather has been crazy here the last few days with smoke in the area still from a nearby wild fire, humidity, which is rare, and storms. Sunday night was very bad for Skipper sleeping in the backyard because it was hot, humid, and thundering. He didn’t calm down until after midnight and I was a little cranky at work the next day due to lack of sleep. Looking forward to having him sleep in the house, but we need to make sure the constant peeing problem is better first which might take a few more weeks on insulin.

I did get creative last night as I was craving something spicy and cool. I came up with a raw vegan chili sauce that hubby says tasted like the fire sauce from Taco Bell. Only this version is slightly healthier using fresh basil, tomatoes, and garlic.

Raw Chili Sauce

  • 2 medium tomatoes, chopped
  • 1/4 cup of fresh basil leaves
  • 1 small clove of garlic
  • 1/2 tsp. salt
  • 1/8 tsp. cayenne
  • 1/4 tsp. black pepper
  • 1/2 tsp. cumin
  • 1 tsp. oregano
  • 1 tsp. chili powder
  • 2 tbsp. lemon juice

Place all ingredients into a blender and blend to a smooth texture. Makes 4 servings.

I decided to coat a high raw “chili” salad blend of chopped tempeh, corn, avocado, chopped red bell pepper, and shredded carrots with the sauce.

To create a high raw chili salad that’s also high in protein for a main dish.

So the end result did not look like chili, but it tasted like it! The tempeh chunks absorbed the spicy sauce flavors well while the avocado balanced the spice with a smooth creaminess.

And created a flavorful and filling dinner with spicy and colorful kick after a long day.

Miko wanted to try it and didn’t understand why avocado and spicy sauce is a no-no for him.

And I got a pleasant dinner surprise from hubby tonight, he created this gorgeous lentil dish using a recipe from Trader Joe’s site to surprise me with after a long day.

So sweet, I think I’ll keep him. :-)

    2 pounds! Good news! I love that it looks like he’s smiling! Glad he’s having a good time, too! Those dishes look D-lish! It made me chuckle when I read “I think I’ll keep him’ – sounds like something I would say!
