Monday is gone, but so is the weekend. I’m ready for the long Labor Day weekend already! We’re just chilling here and Skipper is still content and relaxed.
Now if we can get him to sleep better in the backyard at night, that would be great! He was restless last night and barked to come inside until almost midnight. I hate making him sleep in the backyard, but he can’t sleep inside yet until we have the frequent peeing issue settled down from his canine diabetes. I did get him a dog house which he’s not interested in yet, so I’ll be working with him more on that over the weekend.
The cats are very content to lounge around most of the day lately, these dogs days of summer are rough!
And I’m content eating lost of kale salads, especially with so many dressing flavor options. Feeling a little spicy, I threw together a quick hemp seed dressing that adds a lot of flare and creaminess to a salad.
Creamy Cumin Dressing
- 1/2 cup of shelled hemp seeds (or hemp hearts)
- 1/4 tsp. of salt
- 1/4 tsp. of cumin
- 1/4 tsp. of chili powder
- 1/8 tsp. of cayenne
- 1/2 cup of water
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Use as a dressing or dip. Makes 4 servings.
The texture of the dressing is perfect for coating massaged kale leaves.
I got inspired to create this dressing by a new seasoning I picked up at Trader Joe’s last weekend, South African Smoke Seasoning Blend.
It smells divine with a deep smokiness and spiciness, so I topped the kale salad with it and a little nutritional yeast.
For a short list of simple ingredients, the dressing has a lot of flavor depth with a satisfying level of spice. It complimented the slightly bitter kale leaves nicely and came together very quickly, perfect for a rushed weeknight.
Ooh, I gotta try both the dressing and the new TJ’s seasoning. I’m with you, can’t wait for the long weekend, this week has been a bear so far!
