Watermelon Tomato Salad

July 25, 2013 by christine

Between my Costco trip last weekend, our garden, and this huge batch of tomatoes delivered in our farm box today, we’re overflowing with tomatoes!

I needed to use some up quick with dinner and was craving something cool and hydrating since today’s high was 106 degrees of dry heat. I decided to experiment with a sweet and spicy meal salad using watermelon, my favorite fruit and so perfect on a hot summer day. This salad is a little daring with spicy chili paste, but it’s also sweet and refreshing while being hearty and filling with the addition of chopped tempeh.

Watermelon Tomato Salad

  • 3 cups of diced watermelon
  • 3 cups of chopped tomato
  • 8 oz. package of tempeh, chopped (or 1 cup of shelled hemp seeds)
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped green onions
  • 2 tbsp. lemon juice
  • 1 cucumber, diced
  • 1 tsp. chili pepper paste or to taste

Mix all ingredients in a large bowl and serve. Makes 4-6 servings.

I used Amore Chili Pepper Paste, it’s vegan friendly and stores in the fridge for a long time which is good because a little goes a long way.

The salad is a colorful work of refreshing art, perfect after a hot day.

The tomatoes and watermelon add a cool and crisp texture while the herbs and chili paste slide in flare.

This sounds terrific! I have to find that paste! I’m loving the watermelon base in this with all of the other ingrdients! Very nice!

What a juicy salad! And I love sweet and spicy together. Thanks for the tip on the chili paste. I need to pick some up!

Thanks, it was a great combo and the chili paste adds easy flare to salads, quinoa, and just about anything. :-)
