The Weekend

Another weekend flew by too fast, wow! It’s been a little chaotic here because we’re dog sitting again, this time for my dad’s husky mix while he’s out of town and she’s a sweetheart.

But a little more of a challenge since she’s a senior dog, she takes medicine multiple times a day and needs frequent backyard visits. She’s also slow and mostly deaf, Miko runs circles around her confused trying to get her to play. And Leela has not warmed up to the idea of sharing the house with her yet getting snippy and growling when she’s near.

Hubby and I made it to Baagan for this week’s salad trio and it had a daringly fun salad – Buffalo-style Hot Whig Cauliflower which is basically cauliflower seasoned with a spicy and creamy vegan hot wing sauce.

It was very tasty and a nice level of spice, maybe too much for some. Thug Kitchen also posted a vegan Buffalo Falafel recipe this week with cauliflower that I need to try soon.

I did get some relax time this morning with Shadow reading the Sunday ads, he’s a sucker for newspapers and laps.

I also threw together an experimental salad with a simple avocado dressing that worked well.

Tangy Avocado Dressing

  • 1 avocado, seeded and scooped
  • 1 tbsp. rice vinegar
  • 1 tsp. garlic powder
  • 1 tbsp. tamari
  • 1/2 cup water

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Makes 4 servings.

For simple dressing, it added a lot of flavor and creamy texture to a basic cucumber and carrot salad.

But I was having a strange craving by dinner time after running errands and catching up on laundry today. It’s about 100 degrees here and I wanted a hearty hot stew for dinner. What!? But I love making one pot meals by adding ingredients into a simmering soup pot until it tastes good. And this creation ended up being a spicy curry tofu quinoa stew with green peppers and zucchini.

While it was good, the recipe still needs a little perfecting before posting.

Finally hubby dragged me to see Pacific Rim.

To be honest, I wasn’t totally jazzed about it. The previews made it seem like watching someone else play a video game with more fighting and special effects than actual plot. But it was actually a really good movie with engaging character development and plot. And it was not boring, there were no extended slow scenes.

    WHAT A FACE that sweet pup has! LOVE the eyes! The dressing and food looks and sounds great! LOVE the close up with your kitty, too! I wasn’t sure about that movie, either! So far we haven’t seen it – might wait until it hits iTunes/Video! You and your husband sound a lot like my husband and I! Of course, my hubby isn’t veg, but we do have a lot in common :)
