Protein Curry Dressing

Whew, it’s been a long week already getting back into the work grove, dealing with the hot weather, and getting caught up with house stuff after a week of playing. Shadow has been very clingy with hubby since we got home making sure he doesn’t leave again.

And insisting he has lots of lap time to make up!

I still have some healthy eating to make up and have been craving cool salads in the dry heat here. One of my favorite go to protein powders for breakfast smoothies is Garden Of Life’s Raw Protein, which is a blend of sprouted rice protein with probiotics.

With 17 grams of protein per scoop and only 80 calories, it’s a nice little protein kick in a fine powder perfect for blending with carrots, bananas, kale, etc. But the plain flavor is also perfect for sweet or savory recipes, so I decided to try it in a sweet and spicy curry dressing to turn a simple kale salad into a refreshing summer meal.

Protein Curry Dressing

  • 1 scoop of Garden of Life’s Raw Protein Powder
  • 1 banana, peeled and chopped
  • 1 clove of garlic
  • 1 tbsp. of curry powder
  • 1 tbsp. of coconut oil
  • 1/2″ thick chunk of fresh ginger
  • 1 tsp. of onion powder
  • 1 tbsp. of apple cider vinegar
  • 1/2 tsp. of salt
  • 1/2 cup water

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. serve as a salad dressing, dip or spread. Makes 2-4 servings.

Thanks to the curry powder, the color is a beautifully vibrant orange.

And complimented the green salad nicely with a smooth and creamy texture.

The dressing coated a large kale salad nicely and my serving was very filling topped with nutritional yeast and hemp seeds.

The dressing has a sweet and spicy curry flavor that’s smooth and rich, not gritty or earthy from the protein powder. And I think I need to use the powder in more salad dressings!
