Cheesy Flax Sauce

Back to the grind after a long weekend and it was nice to disconnect for a few days after a crazy week. Well, as much as I could being on call for work. We had a laid-back small Memorial Day BBQ at my sister’s house Sunday that was very pleasant. I packed a bunch of Gardenburger Malibu Organic Vegan burgers for the gathering and loaded mine with veggies and packed more veggies around it. :-)

But we wrapped up the evening early because I had to get up very early Monday for the Wounded Veteran 10k Run I ran with a bunch of co-workers to raise money for wounded veterans. And I was happy to be running it even though it was early, cold, windy, and drizzling rain.

The weather was really strange for this time of year, I debated on taking my jacket, but decided to leave it in the car and brave the chilly wind while we waited to start the race.

I was determined to rock the 10k with a better pace than Run Rocklin, but that was a lofty goal for a hilly course that I’ve never run before in windy weather.

The course was a little crazy mostly being on narrow bike trails and hilly hiking trails and it weaved through and around a lot of random trails and paths marked by little arrows for runners to follow. The 10k course merged with the 5k course a couple of times that added to the challenge of passing slower runners and walkers. Still, my pace was not too shabby!

And too funny that I was running with the same 81-year-old runner I followed during Run Rocklin, but I beat him this time. :-)

After the race, we just chilled at home for the rest of the day since it rained. We watched movies, Arrested Development on Netflix, and worked on house projects and it was nice. I debated hitting the grocery store for dinner ingredients since the kitchen is getting low, but decided to get creative with what we had making a curried quinoa, lentil, and eggplant stew – perfect for the weather.

And I still have not made it to the store for dinner tonight, so it was slim pickings for fresh veggies – fresh broccoli and green peppers. So I threw together a tofu stir fry and a new cheesy flax seed sauce to go with it.

Cheesy Flax Sauce

  • 1/4 cup sun dried tomatoes
  • 2 tbsp. miso paste
  • 2 tbsp. apple cider vinegar
  • 1 tbsp. flax seeds
  • 1 cup of water

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Makes 4 servings.

The sauce takes on a thick and cheesy texture, flavor, and color from the dried tomatoes and gelatinous flax seeds and it can be served as a raw dressing or a cooked stir fry sauce.

I removed the stir fry from the heat before pouring in the sauce to avoid overcooking it and the veggies.

And had a simple cheesy tofu broccoli stir fry in minutes for a simple dinner.

For not having much in the kitchen, dinner came out great! But I think I’ll head to the market tomorrow finally.

    WOW! That Cheesy Sauce looks great! The food is amazing – I’m so hungry right now! Congrats on the run! I applaud anyone who can run long distances! I used to sprint short distances when I was younger but can’t even do that anymore! LOL
