I know, another avocado dressing. I can’t help it! Avocados are cheap here now, under $1 each. And they’re amazing! Plus I have a few ripe ones I needed to use up quick this week. I have not been to a grocery store in over a week as I’m having fun using up what I can in the freezer and pantry and from our garden. Tonight I decided to swipe some kale from an overflowing pot for a massaged kale salad.
And Miko decided to do a little swiping of his own taking off with a huge kale leaf from my stash.
He loves chewing on the stems and treats them like a bone growling at anyone that gets near it.
He dragged it inside to finish his treat in bed.
While I massaged the rest of the kale for a salad.
And created a kicky and creamy avocado dressing to go on it.
Kicky Avocado Dressing
- 1 avocado, seeded and scooped
- 1/4 tsp. salt
- 1/4 tsp. smoked paprika
- 1 tbsp. of agave nectar or a pitted medjool date
- 1/8 tsp. garlic powder
- 1 tbsp. apple cider vinegar
- 1/2 cup water
Place all ingredients into a high speed blender and blend until smooth and creamy. Makes 4 servings.
I added alfalfa spouts, shredded carrots, and hemp seeds to the massaged kale and coated it with the dressing.
And topped my serving with nutritional yeast for a little cheesiness.
The dressing has a wonderfully kicky and tangy flavor that isn’t too strong or spicy and the creamy texture compliments the rougher kale leaves perfectly.
