Whew, Friday is almost here! And after a few busy weekends, I’m ready for a little downtime this weekend. We’re all looking a little worse for wear around here, Shadow has been parked in our bed all evening.
Leela is wiped after spending a day with very active nieces!
Then there’s Miko who’s always ready to party. And eat.
Our fridge is almost overflowing with veggies after a farm box delivery this morning, not a bad problem to have! But I needed to use up some spinach, sprouts, and other veggies which meant another huge salad tonight. Good thing I don’t get tired of salad and it’s a great comfort food after a stressful day.
I also have plenty of avocados to use up after buying a huge bag at Costco last weekend, how could I resist at under $1 each?
That means another avocado dressing since I’m addicted to the light and fluffy creaminess avocados add to dressings. This dressing came out very tangy and punchy adding plenty of zing to my salad concoction for a simple ingredient list.
Avocado Balsamic Dressing
- 1 avocado, seeded and scooped
- 1/4 cup balsamic vinegar
- 1 pitted medjool date
- 2 tbsp. lemon juice
- 1/2 tsp. pepper
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Makes 4 servings.
The dressing is very thick and the color is, well, interesting.
It takes a little effort to thoroughly toss into a salad, but worth it because it coats each leaf nicely with a savory and tangy flavor.
I threw in plenty of hemp seeds to make it a meal salad.
And left the table feeling very full after enjoying this mountain of flavor.
We have some downtime this weekend, too! The next 2 or 3 weekends will be hellish but I’m looking forward to them as we will be at events for our Wildtree! I think I might post a little bit about that today! Later.
Your kids look so cute – as always! I was out of the house most of last night and ours weren’t very happy with me about that!

I’m always amazed at your continuous creativity when it comes to new salad dressings. My “experiments” don’t usually work and I end up regretting the money I’ve wasted on something inedible.

The Avocado Balsamic Vinaigrette is fantastic! (I used 1/4 tsp of freshly ground pepper (1/2 tsp seemed like a lot for one avocado) and I thought it had just the right amount of bite. ) This recipe is now one of my top 3 favorite dressings. Thank you for sharing it. :-)
