The good news is this week is over the hump and that’s a fabulous thing after a non stop day at work. And it’s time for another What I Ate Wednesday post!
I’ll trade her, she can go deal with problem co-workers and networks all day and I’ll sit in bed since it was tough getting out of it this morning. But I did finally and felt ready to start the day after a cup of coffee. Or two.
Breakfast: A monster smoothie with a packet of Garden of Life’s Vanilla Raw Protein.
I picked up a box of the packets for hubby’s business trip and have been using up the leftovers in my smoothies, the vanilla flavor is sweet and smooth blended with frozen banana chunks, kiwi, carrots, and spinach. And I threw in a chunk of ginger and sprinkle of cinnamon for flavor.
I packed the smoothie to go to sip on in the office starting the day and tackling email.
Snack: By 10:30 AM my stomach was growling, so I grabbed an apple from my stash for a mid-morning snack.
Lunch: Good thing I had a snack because I finally escaped for lunch 20 minutes late and met hubby at Baagan for the Persian Toasted Grains Salad.
It was huge and very filling, perfect to refuel with for the busy afternoon. And it had sweet clusters of dates and/or raisins mixed into the savory grains, delicious.
Dinner: I turned to my busy day comfort meal for dinner, a huge salad with collard greens, sprouts, red peppers, and sauteed tempeh cubes dressed with olive oil, balsamic vinegar, and Trader Joe’s 21 Seasoning Salute blend.
Followed by a banana for dessert.
Overall a good day of eats. Stress is another thing because it was a stressful day with tons of issues coming in. Time flew by, but I’m ready to blow off a little steam with a run and look forward to the long weekend ahead!

I mentioned you and your blog in my post today. I tried your Hemp Cinnamon Sauce but mine wasn’t as smooth as yours – but I will certainly be trying again! LOVE the idea! The Chi is a Q-T!!!! I posted more pics of Paco today, too! I have that same Blender Mug! I love it! Which online shops do you frequent for ‘cheaper’ raw foods and such? Thanks!

Thanks for the mention! I wonder if the blender had something to do with the smoothness, I’m using a Vitamix. Sometimes stop-and-stirs are needed for thick hemp sauces too and doubling the recipe to create more liquid to blend might work better for your blender. Lately I’ve been using Amazon, Costco, Whole Foods, and Trader Joe’s for a lot of my ingredients depending on who’s cheaper and Amazon has been great for hemp seeds, chia seeds, and protein powders, and grains. Especially on a Subscribe and Save regular shipment to same even more.
