Friday almost being here is such a wonderful thing, it’s been a week! And VegFest is this weekend in Sacramento! I really enjoyed the event last year, lots of great info and samples for a cheap admission price.
I’ve been trying to eat well this week after an indulgent long weekend with plenty of huge salads. And my avocados are finally ripe enough to use!
Perfect for creating another dressing with a simple list of ingredients and a lot of flavor.
Avocado Orange Dressing
- 1 avocado, seeded and scooped
- 1 orange, peeled and chopped
- 1″ chunk of fresh ginger
- 1 tsp. tamari sauce
- 1/8 tsp. red pepper flakes
- 1/4 cup water
Place all ingredients into a high speed blender and blend until smooth and creamy. Makes about 4 servings.
You can add a little more pepper flakes for more of a spicy kick, or sprinkle a few additionally on the salad.
The texture of the dressing is very thick and creamy, almost like an avocado pudding and perfect for me. But you can add a touch more water for a thinner texture.
The thick and creamy texture was a little work to mix into a salad, but worth it because it coated perfectly with a slightly tangy, sweet, and spicy flavor.
After adding hemp seeds and walnuts to the salad, I think I covered all the good fats tonight. :-)
Since poor Miko could not share the salad with me, avocado is not good for dogs, he settled for sneaking cat food.
