Weekend Roundup

Boo, where did the weekend go? But today just got a little brighter thanks to Kalli of Fit and Forty Something and winning her Rescue Remedy Giveaway! I’ve been laying low this weekend enjoying taking a few days off after a busy week and a sad Friday. I just slowed down to enjoy a little disconnect time by snapping moon pics with hubby using the telephoto lens.

Had lazy mornings with snugly pets.

Who wanted plenty of lap time.

Enjoyed a fresh and clean kitchen island thanks to hubby.

Drank raw protein smoothies for breakfast.

Had a lovely dinner out with hubby enjoying a vegan marinara pasta dish at Il Fornaio.

Had a messy Mexican vegan plate at a family birthday party.

Worked on a new high raw gingerbread hemp seed dessert ball recipe for the party that’s nearly ready, but needs a little texture and method perfecting. Turns out when you throw raw dates and molasses into a food processor, it turns into a super gloppy paste that even the most powerful food processors gag on!

I made a huge batch of curried quinoa to freeze and enjoy during the week.

And enjoyed a steamy curried quinoa potato bowl at Baagan that was just heavenly on a chilly rainy day.

Also bought this big box of House Foods Premium Non-GMO Firm Tofu from Costco for $3.50.

It contained three 16 oz. packages that could easily last me the week or more for cheap vegan protein.

Each package contains four large pieces of firm tofu for easy patties to fry or make single-serving meals from.

I chopped one package up tonight for a simple stir fry using up random, mostly-used frozen veggies bags from the freezer.

And tamari, ground ginger, and tahini for a simple stir fry sauce.

And dinner was served in minutes with some lightly steamed Brussels sprouts I also needed to use up.

Overall it was a pleasant weekend and nice taking some down time. But back to the grind tomorrow!

    is that island new? it is gorgeous!

      Nope, we’ve had it for a few years – it’s actually two islands back-to-back from Ikea and added so much storage to the kitchen.
