WIAW for a Crazy Tuesday

Happy Wednesday, this week is getting closer to being over! And I actually documented everything I ate yesterday for What I Ate Wednesday, something I have not remembered to do in awhile!


Spooky Snacks and Healthy Halloween Treats
Breakfast

A smoothie with Garden or Life’s Raw Protein, a banana, kale, and a carrot that disappeared on the drive to work.

Snack

I had two mini apples mid morning at work for a snack and good thing since I was an hour late for lunch!

Lunch

Leftover curry seitan from Monday, not an appetizing pick with I dived into it before remembering to take a picture. :-)

And a large pear and a bunch of flax crackers.

Dinner

I annoyed the pets with my camera while I decided what to make.

Then started assembling a simple kale and hemp seed salad.

Seasoned with fresh rosemary, cumin, garlic powder, salt, apple cider vinegar, nutritional yeast, and a drizzle of olive oil.

I also sauteed sweet potato chunks in a little coconut oil, curry powder, garlic powder, and cayenne to go with the salad.

And dinner was a simple kale salad with curried sweet potatoes.

Dessert

An un-pictured banana. :-)

Thoughts

I ate a lot of fruit which is pretty common for me and I also eat a lot of dinner leftovers for lunch the next day trying to be resourceful on saving money and not wasting food. But I’m also guilty of getting a huge, pricey salad from Whole Foods for lunch when no leftovers or fresh salad ingredients are available. :-)

    I hadn’t thought of sautee-ing sweet potatoes. I’ll have to try it the next time I want a sweet potato in a hurry. :)

      It’s so easy stir frying sweet potato chunks in a wok with a little oil, perfect for a week night! I like to season them with a little pumpkin pie seasoning, curry, or just a little salt and pepper.

    You and I are birds of a feather! I love garden of life…their protein powders and meal replacements are awesome. I’m also a big fan of vega, but I don’t think that’s raw.

      Me too, I want to try the Vanilla Raw Meal next and love that it’s slightly cheaper than Vega! :-)

    It’s a little more than slightly cheaper! I have the vanilla meal replacement. it’s good, but has over 300 calories per serving, so I half it!

    Buy it on amazon… it’s cheaper than whole foods!
