Happy Saturday and I am so glad the weekend is here! What a week at work! Down time is so important now when things won’t be slowing down over the next few weeks, our team is short-staffed again and lots of people taking vacations, except me :-(, and still plenty of projects and upgrades going on. Our poor pups have been getting frustrated with me not being in the mood to play when I get home.
And I’m getting frustrated from feeling like I don’t have enough time or energy to do all that I want currently, but I keep reminding myself things will slow down soon – right? I have been struggling to keep up with my exercise schedule during the madness at work and glad I have been, blowing off steam to a great playlist has been very therapeutic at the end of a stressful day.
Between the hot temps and stress, I’ve been trying to eat very well this week too with no alcohol on work nights, no calories after 7 PM, and avoiding anything too salty or sweet later in the day to not interrupt my limited sleep this week and it’s helped, I have been sleeping better and in a better place at work. I’ve also been sticking to a high raw diet getting creative with lots of salad dressings and raw sauces to dress up meal salads. This one came out very good to use as a dip or creamy dressing and it blends two of my favorite ingredients, mustard and avocado.
Tangy Green Dressing
- 1 avocado, seeded and halved or chopped
- 1 tbsp. Dijon mustard
- 1/2 tsp. salt
- 1 tsp. fresh minced parsley
- t tsp. lemon juice
- 1 small clove of garlic
- 1/4 cup of water
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Makes about 4 servings.
The dressing has a very thick and creamy texture that coats salads nicely and would work as a spread for raw wraps or a dip too.
It has a mild tangy flavor with a nice grainy texture from the mustard, but the flavor is not too spicy or strong and doesn’t overpower the fresh veggies.
I love an opportunity to use purple carrots in salads and we had just received a few in our farm box that I couldn’t wait to use, they add such a pretty color splash to salads.
Today my schedule is open and I’m thrilled, might go for a run later, take the dogs for a long walk, tackle some gardening, maybe a little house cleaning, and I love it! Hope you’re having a wonderful Saturday!
