Fast Quinoa & Paranoia

I actually slept in until almost 9 AM this morning, yikes! I’ve been exhausted and stressed the last two days because of work and everyone around me has had or has a nasty stomach flu in the last two weeks. I’m not sure how I haven’t gotten it yet, but can you tell I’m just a bit paranoid?

I’ve been taking plenty of probiotics, eating oranges, and drinking tons of tea and water at work this week. Not sure why catching this bothers me so much, I used to not be such a germaphobe when I was younger. But hubby and I caught something like this years ago days after we moved to California, the poor guy had to endure his first day of a new job feeling like hell and I had no energy to unpack or even get up a flight of stairs for days. Not fun! Part of it is the thought of not being able to exercise and function for a few days on top of missing and falling behind at work. And I don’t want to catch it and pass it to more people, like hubby. Thank goodness the weekend is here and hoping I don’t come down with it!

Last night I was not in the mood to mess up the kitchen, so we stepped out to a local Thai place to decompress starting with Thai beer.

And a fabulous tofu noodle dish that disappeared quick.

Not raw and a little greasy, but it was so good with a slight spicy kick.

But another dinner this week that was all about fast and easy was a quinoa throw together that I did not follow or plan a recipe for, I just brought some veggie broth and quinoa to a simmer and started adding goodies until it tasted good. I started with a pesto quinoa adding basil, minced garlic, and pine nuts. Then added fresh parsley and spinach that needed to be used up, then chopped tomatoes.

While we steamed broccoli stove top to go with it.

It took about 30 minutes, but was fun just tossing ingredients in and experimenting.

And the quinoa came out very good with a garlic kick and a creamy texture from the pine nuts and nutritional yeast I mixed in.

Do you get paranoid when everyone gets sick around you?

    SO PARANOID! And for good reason – I almost always catch it! lol! I need to do more immune stystem boosting exercises and up soups and stews in my diet i think <3 I ran a 101.2 fever last week that sent me into a haze. no bueno

    anywho! love your quinoa concoction! i've been cooking in non. stop. lately. so in love.

      Thanks for justifying it, I feel bad treating everyone like a carrier monkey, but one guy was knocked out of work for a week with it – no thanks! Hope you’re having an awesome weekend.

    I have that pink KK, too, but in the larger size, 32 oz I think it is. And I am a little paranoid, too, with getting sick. Who wants to be sick…ugh! So I am all about the probiotics but with Skylar in school, the germs come home in full force and we do succumb to some things.

    The thai food looks awesome. A little greasy as you said but sometimes….that’s just perfect :)

      Ugh, I used to catch everything when I worked at a school in Florida, it wasn’t fun!

    Hi, thought i’d stop by to say I love your site!

    My immune system used to be really weak, so I’d always catch any sickness I came into contact with. Since going on plant based healing diet however I am much stronger and noticed I rarely get sick… but i’m still always so paranoid!

    You won’t get sick, just stay positive! The oranges and kevita won’t hurt either :)

      Hi and thanks! :-) My immune system too, I caught everything while working for a school. True, I have not been sick much since going plant-based, but still paranoid.
