Creamy Brussels Sprouts

TGIF! I’m happy to put this week behind me, it was another busy one at work. Too bad I have to work a little this weekend, ugh! Funny that it’s been less than a month since we adopted Miko.

It feels like it’s been much longer, in a good way! The last few weeks have been a whirlwind of craziness with busy weekends, training, and work. But the little guy seems to be perfectly comfortable in his new home.

He’s been a blast to have around aside from the occasional cleanups, I’ve never seen a dog with so much energy. Maybe it’s the V-dog food he inhales?

There have been bumps getting him to leave our cats alone, but it only took about a week of can shaking and Cesar-style calm and assertive energy to get that little problem under control. Now he hardly acknowledges the cat’s existence, which is a major win for us.

Another win for me is finding ways to enjoy brussels sprouts. I’m still trying to find a raw recipe I can enjoy them in that doesn’t require hours of marinating.

Until then, my favorite is steaming them stove top in a double broiler for about 20 minutes.

The software texture makes them much easier for me to chew and enjoy.

This time I swiped some fresh rosemary from the garden to create my creamy hemp seed sauce.

The thick and rich texture of the sauce seemed perfect to me for coating the steamed brussels sprouts.

Tossing them with the sauce looks a little gnarly, but filled the kitchen with a wonderful rosemary aroma.

And didn’t look too shabby served.

Thumbs up for the flavor combo, the silky and creamy sauce complimented and toned down the strong, slightly bitter flavor brussels sprouts can have.

    creamy and brussles arent things I usually think of as a pair but wow, these look great.

    and your doggies…are soooo cute :)

      True on brussels, but these were really good.

    The only raw way I found to enjoy brussels sprouts was to shave them really finely and toss them in a salad. I didnt have to marinate for hours but the prep work was still pretty time consuming. I will confess I usually just give in and roast them in the oven-so good!

    I have actually never had brussels sprouts before. I keep seeing them pop up and think I may want to try them. Your dish looks yummy! Sorry you have to work a little this weekend – that stinks!

    Mmmm…brussels sprouts are definitely one of my favorite veggies. Love the idea of pairing them with a creamy sauce!

    I’ve never tried brussel sprouts raw. Hmmm, never even considered it. I looove them roasted though. One of my fav veggies. The sauce sounds good too!
