How did Monday get here so fast? Time flies when I’m running around like a mad woman checking off my task list. At least someone had a relaxed weekend.
Shadow’s favorite toy in the world are cheap little catnip puff balls and I wish I could be so entertained with a $0.25 toy!
He pent a good hour skidding up and down the halls chasing and throwing his toy around before he wore himself out.
Then decided he had more energy to play all night…
Sunday started out very early for me with a green purple monster smoothie for breakfast before heading out on a 6-mile run. Since the high was over 100 degrees, I had to get my long run over with early before the heat kicked in!
After my run, I got a nice email from RunKeeper thanks to aggressive half-marathon training this month.
And I’m not even done running this month. :-) I just love the RunKeeper iPhone app to track my runs and being able to log into the web interface and watch my total miles go up for incentive. A post-run snack of Mint Chocolate Energy Balls is also good running incentive.
After church, my mom and I went to an Asian buffet for lunch were the vegan options weren’t too exciting.
The seaweed salad was just okay and the pickled veggies didn’t seem that fresh. Like a lot of cheaper buffets, fried meats seemed to be their specialty and I don’t think I’ll be making a trip back anytime soon. At least fortune cookie was encouraging.
After lunch, I headed to visit my grandma at her new care facility which was hard, but good. Hard because the atmosphere is just depressing there with so many sick people and I’m worried about her getting depressed and lonely while there. We’re trying to get her recovered and functional as soon as possible to get her out of there, but it’s a challenge just to keep her in high spirits with all her physical challenges. We played some games and talked about the future when she’s recovered enough to leave which seemed to help.
When I got home, I had laundry mountains and house chores to tackle to get ready for the new week. I guess because I’m strange and/or trying to channel cooler temps, I was craving lentil stew for dinner. I threw together one of my basic lentil stew recipes, but used a 1/2 cup of quinoa and a 1/2 cup of Bob’s Red Mill Textured Vegetable Protein in place of the potatoes.
The textured vegetable protein did an interesting thing in the stew absorbing the sauces and taking on a ground meat-like texture.
Very hearty and tasty.

i use the runkeeper too christine and i love it. i also did 6 miles yesterday and had a smoothie :)

the lentil stew looks so comforting and good!

You are smart to think about it. Even you and i would get depressed if we were there for any more than 24 hrs!! and we’re not sick on top of it all.
