Goddess Dressing & Comfort Dinner

I’m planning a mini getaway to the cool beaches of Northern California and can’t wait! Things have been non-stop for the last month or so with so much going on at work that I’m just starting to feel a little burned out even doing the things I enjoy, like blogging, playing with recipes, and working out. That’s a huge sign for me that some time away for a change of scenery and fun is needed. So I started this morning with a pre-workout green monster smoothie while working on a to do list to tackle before the great escape.

While other members of the house enjoyed being lazy.

And taunting me with their laziness.

Meanwhile I tackled redoing and sterilizing the massively huge cat box we have for our picky cats.

I have one cat that insists on digging to China every time he uses it and another that occasionally misses, so the Petmate Giant Litter Pan with super high sides is perfect for them. But it’s huge and takes up a lot of space in our laundry room and can be a huge ordeal to clean.

For lunch I wrangled a wad of fresh herds from our garden for Angela’s Vegan Green Goddess Dressing.

I didn’t have avocados on hand, but she mentioned tahini would work. So naturally I went with 3/4 cup of hemp seeds and 1/4 cup of tahini in place of the avocado. :-) The dressing was wonderful with a strong tangy basil flavor.

Hubby liked it so much he was spooning it from the Vita-Mix – win! I recommend trying it with hemp seeds/tahini and/or avocado, the flavor has a lot of depth with a slight sweetness.

After banging out about 42 loads of laundry, bathroom cleaning, errands, and more fun house chores, time for a relaxed dinner at home. Since I had cauliflower and broccoli to use up, I was craving Creamy Hemp Sauce to go with it.

I love this dish because it’s more like a creamy comfort meal rather than a high raw nutrient powerhouse, light-steamed broccoli and cauliflower are so filling.

And it comes together faster than baking a processed pizza or making boxed mac an’ cheese. It was a productive and fun Saturday full of great eats.

    Hubby liked it so much he was spooning it from the Vita-Mix – win! = NICE!! that’s high praise right there and love the modifications you took.

    I love mini-getaways :-)

    Stir-fries are my go-to when I really don’t feel like cooking…so quick and easy. Big salads are also a good one!

      Stir fries are awesome for that, I love them late in the week when fresh ingredients are running low, I can just toss whatever in the wok. :-)

      Poop shovel is a great name. :-) The two bins on the side of the box are great for storing the shovel and bags for faster scooping.
