Welcome to another WTF Thursday meal where I’ve managed to deplete our stash of fresh ingredients and desperately need to go shopping. My overflowing mini compost bin is showing the evidence not allowing me to stuff anything else in it until I unload it into the big bin outside.
Not a problem since it’s only 90 degrees today, not 102, I might go for a run later! But sheesh, compost bin, cat box, trash, 2-day-old load in the dryer – lots to empty today! Yet I had no problem emptying the fridge this week. In scrounging through the remains, I came up with on odd mesh of foods to create some sort of meal out of – one Southwest Sunshine Burger to use up, TJ’s organic frozen corn, Follow Your Heart Nacho Vegan Gourmet cheese alternative, a sad, little onion, dehydrated tomatoes, and fresh cilantro swiped from the garden.
Hmmm, southwest skillet? Yes! I sauteed the onions and tomatoes in a little olive oil over medium heat.
Then crumpled the Sunshine burger into the fry pan and added the rest of the ingredients and continued to saute until I got a nice, little char.
Then I just served topped with a little shredded Nacho Vegan Gourmet.
Not a bad dinner for limited ingredients and the leftovers are perfect to top a salad for lunch tomorrow. The spicy black bean flavor in the Sunshine Burger went perfectly with the Nacho “cheese”, no need to add additional seasoning to this fast meal. Next time I might try the two together in burger form. :-)
