Another hectic start to a busy week and I’m on call this week. But I’d like to forget that and go back to Santa Cruz where we escaped for a long 4th of July weekend a couple of years ago. And found that’s a wonderful time to go since all the traffic and crowds are heading the opposite direction to Lake Tahoe and the weather was perfect for a little beach enjoyment. I was giddy like a goofy kid about this trip because of such wonderful childhood memories from the Beach Boardwalk.
Playing crazy old games in the retro arcade and finding my ski ball skills have gotten weak!
Riding a rickety, old, wooden coaster where creaking and cracking boards are part of the thrill!
And taking in amazing views of the ocean from the boardwalk.
For July, the temps were perfect in the 80s with a breeze. So the water was a little chilly, parking it on the beach was fine with me!
I think I enjoyed the night views of the lit up boardwalk more than the fireworks.
And there was taking in beautiful views from nature hikes.
Amazing cliffs and crashing waves.
And an amazing redwood park, I never get tired of seeing these huge beauties.
Back to reality, I had a fridge full of weekend leftovers to use up that included grilled fava beans, baked kabocha squash, snack carrots and sad looking celery. I was craving curry, so tempeh stir fry time!
I threw the carrots into the blender with shredded coconut, garlic and water for a fast stir fry sauce.
And poured it over tempeh, broccoli and the leftover veggies sizzling in a wok.
For a fast and lazy stir fry bowl.
But it was great, perfect amount of curry and way to use leftovers.

Mmmm, this post reminds my I’ve yet to use Viv (the Vita) to make a great stir-fry. Love the idea of coconut curry! Yours looks delish!
ive never been to santa cruz but parts of it remind me downtown myrtle beach..the old roller coaster, the greasy food probably :) the arcade, etc. Except it looks way classier than M.B. and also the ocean is prettier but i will say and you know this from living in Fla…that something about east coast beaches ARE so pretty, too.
