Today was a dirty trick with our weather turning even more spring-like warming up to the 80s and a beautifully clear sky and me being stuck in an office most of the day. But it also got me in the mood to plan a little summer fun and look back on previous summer trips. My husband and I have been together for over 13 years, but have only been married since 2009. Why rush? :-) When we did finally decide to get married, the last thing we wanted was to make a big deal out of it. But still wanted it to be memorable and fun and opted for a planned elopement to the Chapel of the Flowers in Las Vegas. We flew out in August for a long weekend staying at the Encore.
And had an amazing view from our hotel room.
Our first night there, we had an amazing dinner at Top of the World which was a perfect way to start the visit! The restaurant spins slowly on an 800 ft. tower, so slow it’s hardly noticeable. We were treated with a great view of our hotel.
And a gorgeous sunset behind the mountains.
The after dark view was even better seeing the strip lit up.
The Encore was across the street from the Fashion Show mall where we had another amazing meal at The Capital Grille.
The rest of the sights on the strip were awesome, taking in shows at Treasure Island.
And the Bellagio.
Never got a chance to eat at Paris, next trip. :-)
It was an amazing trip for just 4 days full of new sights, romance, relaxing, and fun. We’ll go back at some point and I’m looking forward to it just to find amazing vegan eats.
A perfect trip to reminisce since I’m alone tonight, hubby on a business trip. I was tempted to do the typical single-gal dinner of popcorn and cereal, but decided I was craving lentil stew after inventorying fresh ingredients, a variation my Hearty Lentil Stew with zucchini and celery.
The smell this stew fills with kitchen with as it’s simmering is amazing.
It was a fast, but comforting dinner when I’m feeling lonely.
Maybe cereal and popcorn tomorrow night. :-)
