Down Day with Salad

So glad the weekend is here because apparently I really needed a down day. I managed to spill a glass of wine all over my keyboard after dinner, thankfully sweet hubby jumped up to help and after a blowout with the garage compressor, I think the keyboard is gonna make it. But ugh, I swear my coordination is off recovering from such a week!  Except for a grocery run, I mostly enjoyed a down day at home catching up on work, working out and playing a little in the kitchen.

But I had a bored and cranky dog who needed a little entertaining.

Hubby and I dragged her on a long walk while he snapped pictures of the grazing goats this time.

There were probably 300+ of them working on the fields around our subdivision still and they were just chilling and chomping in the drizzling rain.

After list night’s splurge pizza dinner, I went with a lighter salad for lunch and mixed miso, tahini, dijon mustard, rice vinegar, and a little agave nectar in a bowl for dressing.

It went really well with the dill cultured veggies I mixed into the salad, along with sprouted mung beans, carrots, spinach, and red cabbage.

But I was having a chocolate craving after the crazy week and defrosted the last bit of almond milk pulp in my freezer.

To throw into the food processor with pitted dates, cacao powder, shredded coconut, lucuma powder, and a pinch of salt.

To make more raw “dough” balls – very tasty and filling and I have enough in my fridge to last a few days now!

For dinner I decided on sweet potato fries with another salad.

I chopped up just one medium sweet potato and tossed with coconut oil, a little salt, and nutritional yeast.

Which made a lot of fries! I baked them at 375 degrees for 35 minutes and they came out great – crispy outside and gooey inside.

It went perfect with another salad, this one using Kristen Suzanne’s Nacho Hemp Sauce from her hemp recipe book as the dressing.

But I used Braggs Liquid Aminos in place of the tamari this time and it didn’t alter the flavor. Now I’m gonna enjoy another relaxing evening with hubby, maybe kick butt in the new Mortal Kombat … or get my butt kicked.

    oooooh nice! I was wondering what people did with the “pulp” after making almond milk. I am moving into a new home with a great kitchen right away and I plan on stepping it up a notch and making almond milk, balls, etc. Do you make your own crackers too? oh wait.. I’ll just look in your recipe tab. Happy Easter! xo

    I love that you had wine with a candle!! at your table. I used to do that….pre kid. I need to do that more.

    your sweet tater fries are always PERFECT! love them!

    and iptted dates, cacao powder, shredded coconut, lucuma powder, and the pulp for pulp balls…soooo good looking! thanks for reminding me what to do with pulp!

    i love braggs! glad you had a relaxing day-jeez wine in the keyboard not good. all of your food looks so delicious too. happy easter christine :)

    Ok so i’ve been craving sp fries so hardcore I actually bought some instead of making them! I know! awful! they were all natural and I had a coupon and I still feel silly b/c theres a SP in my pantry. hehe whoops?
