I’ve been busy this week preoccupied with work, tech issues, house work, working out, and trying to find time to play in the kitchen. Someone decided to remind me of that when I tried to snap a picture of hubby playing with his iPad.
Yeah, her food bowl was pretty low. And maybe the catbox needed a little refreshing. And so do I after this week! It’s been such a busy week that co-workers who rarely drink are suddenly looking forward to cocktails at the end of the day. Things will settle down soon … I hope. But it was nice having my fresh produce inventory refreshed with a farm box delivery.
Some cute little sweet potatoes were included in this box, so I had to use up two older ones I had on hand.
I decided to get the spiralizer out to try curly baked sweet potato fries again.
I just tossed the spiralized sweet potatoes in a bowl with a little coconut oil and salt.
Then baked at 400 degrees for about 25 minutes for, uh, interesting results. The thinner pieces were burnt to a crisp while the thicker parts were hardly mushy. Well okay, I decided to work with it not being a fan of food wasting.
As usual, I paired it with a salad and tossed a peeled orange, handful of raw walnuts, large chunk of ginger, and 2 small carrots into the Vita-Mix for a dressing.
And coated a salad of sprouts, romaine, red pepper, and avocado with it.
Which made an interesting dinner. The salad was great and the “fries” were interesting. The crispy burnt pieces were actually tasty, but the fries did not bake evenly and were messy to eat.
They would have been less messy. :-)
At least I still had raw dough balls for dessert.
