After a few days of rich, cooked vegan dinners, I’m happy to get back to high raw and was craving plenty of fresh veggies for dinner. Good thing since I have a fridge full on them from having dinner out twice this week. And I had plenty of time to create a monster salad in the kitchen while hubby was parked on the couch playing with his birthday present from me. :-)
I have a huge OXO mandoline slicer that I only use for big projects, like loading my dehydrator with apple slices, but otherwise avoid on weeknights because it’s an ordeal to use and wash. My mom bought this cute, little Progressive Mandoline Slicer and gave it to me after getting frustrated with it. After using it for awhile, I have to say that I love it!
It’s tiny enough to fit in drawers with my other peelers, choppers, and small kitchen gadgets. It also has a nice safety locking feature that blocks the blade with a simple sliding switch making me less nervous about washing it. Oh, and it’s much faster and easier to wash, much. It also has a fast switch on the side to kick it into julienne mode for fries or shredding jicama for salads. So far it’s been a great tool for throwing together fresh salads quickly on weeknights.
Anyway, as usual I got carried away creating a super salad with spinach, multiple types of sprouts, avocado, carrot, red pepper, cucumber, tomatoes … whew!
So I decided to go simple for the dressing mixing some hummus, lemon juice, nutritional yeast and water in a bowl.
And coating the salad with it.
Monster dinner salad was served and very satisfying. It hit the spot for my fresh veggie craving!
I don’t worry about protein in a salad like this since it was loaded with sprouted lentils, alfalfa sprouts and hummus dressing. And it felt great enjoying a high-raw day today. Hopefully I can do it tomorrow too even though it’s supposed to be cold and rainy.
