Aw, feeling much better today – not as tired or sore thankfully! But our weather continues to be soggy and rainy, it rained all day and is supposed to continue most of the week. I’m already over the rain, but oh well. I packed a quick lunch for work today and got creative for a chia seed pudding container.
Heh, the salt jar is the perfect size for mixing a single serving. And it made a perfect sweet treat at my desk. Yes, I thoroughly washed the jar out first. :-)
After my quick lunch, I headed to Barnes & Noble for a little fun shopping, I love browsing books and it was a nice break from the office even in the pouring rain. I noticed on each featured book table there was at least one vegan book – The Kind Diet, The Veganist, and a few vegan recipe books. I ended up grabbing the latest VegNews issue and Crazy Sexy Diet which I can’t wait to dive into, but it’s nice seeing new vegan options featured.
Since I am feeling better, I decided to get crazy in the kitchen for dinner creating lentil tacos inspired by the Tangy Taco recipe in this month’s VegNews. But, as usual, I was lacking ingredients and not quite energized enough to assemble all three recipes.
I shredded a small head of cabbage for the Dijon coleslaw.
And mixed it with the rest of the ingredients for a beautiful vegan coleslaw.
But I didn’t have all the ingredients to make the BBQ sauce and cheated. :-)
I mixed that and chopped onions with cooked green lentils.
And layered the lentil mixture on cabbage leaves, then piled the coleslaw on top for semi-raw tacos.
It was a great dinner, but I was really impressed with the Dijon coleslaw, the flavor is a masterpiece by itself. I’ll definitely be making more of that recipe! And the BBQ lentil mixture would be fun in salads or quesadillas.
Okay, now I’m gonna try hitting the gym for a little cardio and hope my legs are ready! Hope everyone is having a great evening!

The coleslaw was awesome! It had olive oil, red wine vinegar, agave nectar, Dijon mustard and freshly minced garlic mixed with the shredded cabbage and yum!
True on this week, but I’ve been wanting more time in the kitchen. I’m still feeling the race and will be looking forward to down time this weekend for sure!

I put some chia in a jar the other day. It somehow tasted better that way.
I think it did too plus it’s fun shaking the heck out of it in the jar to mix it up. :-)
Mmmmmmmm, your coleslaw looks wonderful! :) Do you also use Himalayan salt for cooking? I’ve switched to it a few years ago, and I feel much better with it, compared to regular salt.
Yes, I wasn’t thrilled about the price when I switched to it compared to cheaper salts, but it does have a better flavor and texture and I need a lot less of it for recipes it seems.
I still haven’t tried chia pudding! I need to give it a go, because I have a big bag of chia seeds!
You’ve gotta try it, it’s so easy and good! And just a little amount it very filling.

I love tacos so much, and I think the thing I’m always missing from raw tacos (because I’m too lazy most of the time to make my own dehydrated chips) is the crunchiness! The cabbage would be perfect for that!
